Grilled Salmon in Habanero-Butter Sauce

Grilled salmon is a mainstay in the Madness household. Sometimes you just want a simple grill and a basic sauce to top it with. Simple as it is, this recipe excels in flavor.

Grilled Salmon in Habanero-Butter Sauce


  • 2 6 ounce salmon fillets
  • 1 tablespoon cayenne
  • Salt and pepper to taste
  • ¼ cup white wine
  • Spray oil
  • SAUCE: 1 tablespoon melted butter
  • 1 tablespoon white wine vinegar
  • 1 teaspoon lime juice
  • 2 roasted habanero peppers, diced

Cooking Directions

  1. Season salmon fillets with cayenne, salt and pepper.
  2. Heat a large pan to medium-high heat. Lightly spray with oil.
  3. Saute salmon fillets about 1 minute each side.
  4. Add white wine and allow to reduce slightly. Reduce heat to medium-low and cover.
  5. Cook about 5 minutes, or until salmon is cooked through.
  6. Meanwhile, add melted butter, white wine vinegar, lime juice and habanero peppers to a mixing bowl.
  7. Whisk until smooth.
  8. Set salmon onto serving plates and top with sauce.
  9. Serve!
